PCBs, or polychlorinated biphenyls, are bioaccumulative, carcinogenic, and endocrine-disrupting substances. Chronic exposure to low doses of these substances poses a health risk.
PCBs have been widely used as electrical insulators and flame-retardant additives in industrial facilities. They have also been used as flame-retardant additives in many consumer products.
Although banned since 1987, due to their high persistence, they are still present in our food and environment: from the depths of the Mariana Trench (-11,000 m) to the peaks of the Himalayas (8,848 m).
Because of their bioaccumulative properties, they contaminate the food chain, and concentrations increase with the size of organisms. They are lipophilic, meaning they transfer to and accumulate in fats. As a result, fatty fish (such as tuna and salmon) and fatty meats contain higher levels of PCBs.
